Rating: Summary: Buyer Beware Review: Being desperate for ideas as to what to make my 13 year old son who is on a Candida Diet, I thought I had found a gold mine on discovering this book. I was disappointed, however, when I checked with my naturopath regarding the safety of vegetable glycerin, and was told that it could cause diarrhea and/or dehydration, and he suggested that I look for an alternative sweetener. I have had some success using Ms. Burton's recipes substituting stevia. But thanks for trying, Ms. Burton, for so many of us this is a recurring problem.

Rating: Summary: Glycerine Review: It is not the brand but the chemical itself that is important.Chemically, glycerine should be qualified as a sugar alcohol. The Food and Drug Administration (FDA) classifies sugar alcohols as carbohydrates. Thus, glycerine is a really a carbohydrate for labeling purposes. Glycerine is used by the body somewhat differently than are other carbohydrates. To be used as an energy source, glycerine must first be converted to glucose (body sugar) in the liver. After glycerine is converted to body sugar, it then is oxidized as sugar, but the overall process takes longer when compared to other carbohydrates. Glycerine is a common ingredient in low carb bars, where it is omitted from the carbohydrate count. Glycerine does not react metabolically like a regular carb as it does not raise insulin or blood sugar levels directly. In addition, very little glycerine converts to glucose under normal conditions, so it is, for the purposes of a low carb dieter, justified to omit it from the carb total. Rating: Summary: Anti Yeast Diet Review: This book has been a real help to me in my anti yeast adventure. I have been taking lamisil and following the diet for 3 weeks with great success. It is a roller coaster ride, but more ups than downs. The food is not the most tasty at times, but with so little choice it is hard. A favorite is the Oat and Orange Muffins (which I vary with different flavorings Raspberry is delicious!) -- they are simple to make, moist and freeze well. Also real good are the Rice Ball Cookies. This book is a must for those with this particular need. (ALSO - to a previous reviewer: I BELIEVE STEVIA IS VEGETABLE GLYCERIN AND WATER.)

Rating: Summary: Informative Cookbook Review: This is a very informative cookbook. The recipes are the best I have found (and this is the third cookbook I have purchased). I wish I had known about using 100% pure vegetable glycerine as a sweetener months ago! Her recipes make you feel like you are eating "real" food again.
