Review: This is an amazing book that contains information about all aspects of the chemical properties of green tea. There is information about tea polyphenols, ranging from their purported cancer prevention to its deodorizing effects. My only complaint is that the book does not say whether many of these properties are unique to green tea, or if they apply to black tea as well.
