My 21 year old daughter, a college student, was diagnosed with Type I Diabetes recently. The dietician has her "counting carbs" and learning to identify slower-absorbing sources of carbohydrates. She is "new" to cooking, and these delicious recipes fit the trends of today's taste, ease of preparation, and are colorful and satisfying. We are hoping for "Book Two" to be out in a few years. Bravo to the writers!

Review: Did you know people who develop diabetes are usually over fifty and live in "down-sized" households of just one or two people? Like most people their age, they wear reading glasses. Yet most cookbooks for people with diabetes contain family-sized recipes with print that's barely readable, even with reading glasses. As registered dietitians, we've watched our client's struggle with this dilemma and decided to take action. The result is No-Fuss Diabetes Recipes for 1 or 2, a practical cookbook for people with diabetes in an easy-to-read print size. Most recipes in the cookbook make just one or two servings, contain 10 or fewer ingredients and are simple to prepare, healthy and delicious. Each recipe features nutritional information, including carbohydrate choices. We've also included tips on low-fat, high flavor cooking, menu ideas and a plan for stocking your pantry. This cookbook is packed with recipes that any health-conscious cook preparing meals for one or two will appreciate. You'll find recipes for breakfast, lunch and dinner including Craisin Scones, Salmon Caesar Salad, Fruit Soup, Angel Hair Pasta with Asparagus, Rosemary and Thyme Pork Tenderloins, Vegetarian Taco Salad and Chocolate Pudding.

Some of the recipes you get in other books have way too much prep time or are too complicated to make. I think this is the best resource for someone with diabetes who has to watch sugar/carb intake. I hope more versions of this book comes out.
Rating: ![5 stars](http://www.reviewfocus.com/images/stars-5-0.gif) Summary: Easily lives up to its name. Review: I am so pleased to have found this book. Type II runs in our family, and I'm trying to prevent it, by being careful about carbs, and balancing them with protein. All the balancing work is done for you. Great to find a cookbook with easy recipes that taste good, and you won't have to eat it all week! It was just what I had been looking for. I've only had it a few days, and have already tried several recipes. And these easy recipes make you realize how easy it could be to create your own variations. As a singleton, I'm glad things serve one or two, and it gives me a better idea of what a right-sized portion should be.
Rating: ![3 stars](http://www.reviewfocus.com/images/stars-3-0.gif) Summary: high-carb/low-fat Review: There seems to be two camps developing in the type 2 comunity, those who follow the traditional ADA high-carb and low-fat way-of-life and those who follow the low-carb, higher protein/fat way. This book is in the high-carb group. Since I'm keeping my BG's 2hrs post meal near the pre-meal targets (<120), the meals here did not help me. Your milage may vary.
Rating: ![5 stars](http://www.reviewfocus.com/images/stars-5-0.gif) Summary: For non-diabetics too Review: These no-fuss recipes are great for ANYONE! You don't have to have diabetes to try these great tasting recipes. And it was such a pleasure to have easy to prepare recipes with amounts to serve one or two people-what a great way to try out a recipe! It is much simpler to double up or increase the serving size of recipes than to divide or reduce a recipe. I think this book should be re-titled to "No-fuss Recipes for One or Two"

Review: This is an excellent book of recipes that taste so good and are easy to make for diabetics and others. The authors are registered dietitians and a nutrient analysis is provided for each of the recipes. I bought the book for my mother-in-law who is diabetic and decided to keep it myself because the recipes are so good and so easy. It also has a section to help diabetics with planning their meals to meet their meal plan. I am a second year dietetic intern who will definitely recommend this book for my clients when I begin practicing in May 2000.
