Summary: A much needed contribution
Review: This book fulfills a need in the world of diabetic cookbooks. Nearly all diabetic cookbooks include recipes for traditional American home food cooking (e.g., meatloaf, oven fried chicken, etc.), and after looking through one or two of these books, the recipes become redundant. For diabetics whose tastes are more exotic, prefering the foods of Asia or India for example, diabetic cookbooks offer very little. This book is the exception. Kay Spicer has put together a wonderful collection of recipes that range from Japanese to Italian to Portuguese to Eastern European foods. Some of the ingredients are exotic, but not unfamiliar, to those used to cooking international foods. Hopefully, more international diabetic cookbooks will be produced in the near future. With the increasing number of Latinos and Asians being diagnosed with diabetes, the need definitely exists.
