Summary: Some recipes are not healthy for the diabetic.
Review: The American Diabetic Assocoation (ADA)does a lot of good. They are a fountain head of the flow of information to help diabetics.
However, they have not accepted the Glycemic Index (GI) as a food evaluation tool. Dr. Andrew Weil is quoted as saying, "We now know about the glycemic index and its importance in designing a diet for optimum health."
I have used the GI with great success in going from a diabetic with a diabetic glucose reading of 168 to a non-diabetic glucose reading of 103-105. This rating system identifies mash potatoes,
white rice, and white flour as foods that the diabetic should not eat. I eliminated these foods in achieving my success.
ADA and AHA have in this recipe cookbook, a recipe for "Loaded baked potatoe soup". The recipe starts out all right in baking potatoes, but then peels off the skins and"mash with a potato masher. "Cooks Tip" section talks of"mash as usual" or use "left over mashed potatoes".
In addition to mashed potatoes, many of the recipes contain all-purpose (white) flour.
ADA and AHA do have some novel approaches. The have walnuts in granola and pies. Walnuts are a good source of omega 3 essential fat. Most of us do not get enough omega 3's.
I look forward to ADA reviewing the GI for its value in helping diabetics rid themselves of diabetes.
