Summary: Finally! A Godsend for Vegans!
Review: As a vegan, cheese was the hardest thing in my diet to give up. As the book says, cheese is an American tradition, from Macaroni and Cheese at family picnics to Cheeseburgers on the grill on the Fourth of July. But, I wasn't willing to contribute to factory-farming and the decline of my health JUST to enjoy a tradition. I looked everywhere, from soy to rice to hemp to almond to tofu cheeses. All of them contained casein, a milk protein. FINALLY, I found this book! There are so many recipes not only for cheese taste-a-likes like Mozzerela, Muenster, American, etc, but also cheese dishes, like casseroles and, yes, of course, Mac 'n' Cheese. The only qualm I have is that it does use Tofu in several recipes, which I can't stand the taste of. But, that's a personal issue, and in no way affects the book's quality.

Highly reccommended!!

Summary: The Uncheese Cookbook
Review: This is a great book for vegans who still experience the occasional craving for cheese. The recipes use a variety of ingredients to simulate the texture and flavour of various cheeses and cheese dishes.

I found the recipes easy to follow. The ingredients were not too exotic, and the results were well worth the effort. It's nice to be able to make vegan versions of favourite dishes like pizza or macaroni and cheese with all the traditional flavours.

This is a must-have for anyone who finds that cheese is the stumbling block to going vegan.

Summary: The Uncheese Cookbook: Not a Crock!
Review: The Uncheese Cookbook has withstood the test of time. Joanne Stepaniak, renown author, educator, and pioneer of cookbooks on veganism and compassionate living, wrote The Uncheese Cookbook in 1994. That was a time in which vegans, people with dairy allergies, those who were lactose-intolerant, and the health-conscious, were hard-pressed to find alternatives to their beloved cheese. (Before becoming vegan 12 years ago, I was addicted to Havarti cheese, until I realized that instead of ingesting it, I should probably just slap it on my thighs for all the fat it contained!)

I dare say that most recipes for cheese substitutes today are off-shoots from The Uncheese Cookbook. Vegan cookbook authors may "tweak" a recipe here and there, but those of us who use The Uncheese Cookbook regularly, know the original source of the recipes.

Perfect for holiday buffets and pot lucks are the Hot Parmesan Artichoke Dip (devoid of the usual fat-laden mayonnaise and sour cream), Brie, Gee Whiz Spread (for those who love cheddar), fondue (15 different recipes!) and Gazebo Cheezecake with a heavenly caramel nut crust. Other standouts include French Onion Gruyere soup, pizzas, casseroles, Three-Cheeze Lasagne, blintzes, manicotti, kugel, and kid-favorites like grilled cheese sandwiches, and macaroni and cheeze.

This innovative book fills the gap for those of us who love cheese, but value health more. If you decide to order it, you might also want to consider purchasing Vegan Vittles which includes Joanne's awesome recipe for Crock Cheeze!

Summary: Even Dairy Lovers Eat These Recipes
Review: Being Italian and vegan, I never thought a dairy-free lasagne was possible. Then along came the Uncheese Cookbook. The recipe for Three Cheeze Lasagne is worth the price of the book alone! My nonvegetarian boyfriend LOVES this recipe and he still eats dairy. The recipe for Pumpkin Cheezecake is amazing. I brought it to share with my nonveg neighbors and they couldn't get enough. The creamy flavor is absolutely delicious. Gee Whiz spread is great to bring to parties. Ch-easy Bean & Noodle Soup can be made in less than 10 minutes and really hits the spot on a chilly night. This book is filled with amazing totally dairy-free (that also means cholesterol-free) appetizers, desserts, main dishes and more. I look forward to trying many new recipes from this creative and delicious cookbook.

Summary: This stuff tastes NOTHING, and I mean NOTHING, like cheese
Review: So hopeful was I after reading the rave reviews that, not only did I run out and buy the book, I bought a new blender as well.
If I could give this cookbook no stars, I would.
I am not a vegan for health reasons, so the fact that these recipes are low in fat, etc. etc. does not interest or impress me. I want a cheese substitute that tastes and acts like cheese. The recipes in this book just don't cut it. The "Unprocessed Cheeze Sauce", made with boiled potato, carrot and onion, tastes like pureed potato--exactly what it is.
The macaroni and cheeze is not even describable...

So, if you're an ethical vegan and not concerned with fat content or preservatives, you'd be better off buying Veggie Shreds by Galaxy Foods at your local grocer. They taste great and melt like real cheese.

Cheese lovers--DON'T WASTE YOUR MONEY...DON'T BUY THIS BOOK

Summary: Exceptional.
Review: I'm not a "health" minded person. In fact, if there was a vegan alternative to cheese composed entirely of cancer, I would probably try to eat it, and my friends would need to have an intervention to get me to stop consuming my "cancer-cheese." Basically - I'm not health food guy. I'm not "Captain Oat Bran" in other words... So when I saw all the "this stuff is so healthy" comments at the beginning of the book, I was a little discouraged... But that went away quickly. Very quickly. This stuff is just cheezy. Good cheezy, not like most "vegan cheese" recipes though... Genuinely cheesy... No... CHEEZY. The "Unprocessed Cheese Sauce" recipe is super - no MEGA-good. And coming from me, that actually means something.

In summation - I don't care how healthy it is, I'm a moral vegan, not a "health vegan" and when I want cheese, I want something that tastes good, and not just cheese-like, but profoundly cheezy, and this book is that.

To sum up my summation - This book equals good. Very good. Buy it.

Summary: Joanne Stepaniak does it again!
Review: I'm quite amazed at these recipes for "uncheese". I was somewhat skeptical reading some of them, but when I actually tried putting them together, they turned out very well, and are excellent subtitutes for those dishes where you need a dairy cheese replacement. So far every one I've tried has been excellent. This is one you'll want to add to your vegan cookbook collection.

Summary: This is a great book!
Review: I have always been a cheese freak and in some situations, I still eat cheese but I wanted to stop eating so much of it so I decided to give this book a chance. I never thought I'd say this, but most of the time I actually prefer one of her recipes over the real thing. The reason is quite frankly, they have more flavor than real cheese and if you thicken them instead of gelling them so they'll melt, you still get that gooey texture similar to melted cheese.

There are very few cookbooks that I use all the time, but I find myself pulling this one out more than any other and I panic when I accidentally misplace it. I would highly recommend this book to anyone!

Summary: Not missing 'cheeze' anymore
Review: This book is a wonderful addition to my kitchen. I have quite a number of the recipies now, and have loved every one so far (as do my friends). Once you get all of the ingredients you are home free, although some of the recipes do take a little longer to prepare than I'm normally accustomed to. Be sure to try the 'unprocessed cheeze sauce' -it is incredible as a replacement for nacho cheese and is low fat too!
