Summary: Cheese? Doesn't taste like any cheese I've ever had...
Review: I made the swiss cheese in this book. It did not taste anything like swiss cheese. However, my kids liked it and ate it on crackers. I made another kind, but can't recall which one...
I do remember no one liked it, though. And it didn't taste like cheese. If you want REAL cheese flavor, I don't think that you will find it among these recipes, sorry.

Summary: Cured my dairy withdrawal! Highly recommended! :-)
Review: When I gave up dairy products more than a decade ago, I immediately felt healthier, became congestion-free and lost 5 pounds. Unfortunately, I suffered psychological withdrawal for most things cheesy and creamy-until I discovered "The Uncheese Cookbook." Wow. I like these recipes BETTER than the real thing, and have never felt dairy-deprived since!

Here's why I highly recommend "The Uncheese Cookbook":

* Delicious nicely textured recipes - I've made a whole bunch of these over the years, and they've all turned out well. Non-vegans like them too. :-) My favorites include parmazano cheeze (great on bagels, pasta and popcorn), boursin cheeze (simple and tastes like the real thing), chedda fondue (makes great nachos), spinach ricotta balls, and peanut butter fudge pie.

* I think these recipes taste much better than all the prepared vegan cheeses I've bought. They're fresher, too.

* Caloric, fat and protein info. is provided for each recipe. While the recipes are not all low fat, the uncheezes are lower in fat than their dairy cheese counterparts, as the chart on page 17 shows. Joanne provides instructions in the introduction for reducing the fat content of her recipes.

* Instructions are very clear and specific regarding what to buy and what to do. There's a glossary explaining ingredients that might be unfamiliar.

* Recipe yield is provided both in volume and number of servings, so it's easy to figure out how much to make for the people you'll be serving.

* Creativity - Joanne is a pioneer in making concoctions of non-animal ingredients such as cashews, nutritional yeast, tahini, etc. and turning them into delicious, creamy comfort foods.

* There's a good essay on the dietary, environmental and animal cruelty hazards of dairy.

Some things to know about this book:

* Some recipes are quite simple, whiles others require a lot of ingredients and steps. Most are in between.

* Do not expect all the uncheeses to taste exactly like the cheese it was named after. Some are quite close, like the boursin and parmazano. However, others, (e.g. "gooda") does not really taste like the cheese for which it's named, but are quite delicious in their own right. Appearance and texture are quite similar to the dairy counterpart.

This is one of my favorite cookbooks of all time! I highly recommend it to anyone wishing to eliminate or reduce their dairy consumption.

Review: I thought these recipes were totally disgusting! Some of them smell like stinky socks and were totally weird tasting. Bland even...Bad first experience with nutritional yeast flakes.

Summary: Worth Every Penny!
Review: This was the first book by Joanne I ever purchased, and it turned my life around! As a new vegan, I was missing the flavor of cheese, and these simple recipes hit the spot. I've since made many vegan "cheesecakes" for friends with much success, as well as spreads and delicious stews that vegan and omnivore alike all love. Oh my, the hot artichoke dip and cauliflower and cheese soup recipes are worth the price of the book alone.

You will not regret this purchase!

Summary: not impressed
Review: Okay, I know I will get a lot of flack when I say I wasn't impressed with the recipes. Nothing came anywhere near tasting like cheese. I realize these are "uncheese" recipes, but yuck. Am I the only person out there that really didn't like these cheezes? Even my husband who is vegan and adores tofu and soy milk (ugh!) didn't care for them. I am an accomplished cook, and I followed the directions to the tee. Nutritional yeast flakes (one of the primary ingredients in every recipe) don't taste like cheese at all. Neither do cashews. I saved myself a lot of grief by buying soy cheese at the local health food store. Not great stuff, but certainly resembles cheese. Sorry, Joanne

Review: this book has so many recipes for making fake cheese that its wild!!

if u are vegan, or if u are just trying to cut back on unhealthy cheese this is a must have!

Summary: Uncheese=Unbelievable.
Review: Lots of great things in this book that taste kind of like cheese but guess what? They are NOT cheese! Hence the title I'm guessing. Anyhoo this stuff goes great with my meatless hamburgers and non-alcoholic beer along with a whole host of foods I really don't like but they look and some what taste like something I used to enjoy.
I was asking my wife (the imitation inflatable one) why we gave up all the stuff we like, to eat something that does not quite taste like the real thing, but much to my disappointment she just stared at me.
I hope the author comes out with another book of uncheese recipes that are based on real cheese but taste like the uncheese stuff. That would be interesting...un.

Summary: Pleasantly Surprised!
Review: I purchased this book because both my husband and son are both very lactose intolerant. When I opened the book, my initial reaction was: "Oh no, I've ordered a book with a political agenda and nasty recipes." I didn't even know WHAT nutritional yeast was, and my nose was actually curling up at the thought of what these recipes would taste like. But, I perservered, purchased a small quantity of nutritional yeast from a local health food store, and made the parmesan and mozarella substitutes. They were GOOD! I was so excited that I took some of the first batch over to my neighbor to try and she LOVED it, too! Even my one year old daughter was asking for more and more and more. I tried the uncheese danish for breakfast this morning, and my husband ate it right up. I think this book is going to be a well used one in my kitchen from now on.

Summary: Fun and Amazingly simple
Review: Let me start off by saying that I am not a fan of cooking in any way shape or form. When one day my 13 month old son got hungry and told me he wanted food by pointing at the microwave, I knew it was time to make a change, so I decided to equip myself with some good cookbooks. After reading the reviews for this book over and over again I read how easy and how easy the ingredients were to buy I decided to give it a shot, and boy am I glad. I have had the best time making stuff in this book, and when people say easy they mean it. The most amazing thing is the way the author has managed to capture the textures, smell and appearance of many traditional non-vegan recipes(cheezy soups, fondues, desserts, etc) - and did I mention they taste great too? My husband loves to peruse through and pick out something for me to make, and the best part is I actually enjoy making whatever it is he asks because the results are so spectacular. Now I am back buying another copy of this book as a gift for another vegan family friend.

Summary: this book is revolutionary
Review: the most important thing about Stepaniak's Uncheese Cookbook is that it helps us reconceptualize cheese as a combination of flavors and textures instead of letting us continue to treat
it as just an ingredient or food.

Cheese is tangy, salty, creamy, rich--and so are Stepaniak's "uncheeses". By using a combination of healthy core ingredients including torula yeast, lemon juice, tahini, oats, cashews, tofu, onion, garlic, and pimientos, among others, Stepaniak has created some really clever and tasty recipes that take the place of cheese quite well.

If you have read the one negative customer review posted here, let me assure you that that reviewer was wrong. The two recipes upon which that review was based are not the two best in the book. Like any cookbook, some recipes among the hundreds work better than others.
I've spent a few years with this book, though, and it has changed the way I approach vegan cooking. The best recipes in this book are marvels.

A few examples: the "mostarella" "cheeze" (particularly with a touch of hickory smoke flavor added)is a delicious soft, spread that has received praise from everyone to whom i have ever served it. The stuffed shells and lasagna recipes are simple, elegant, and impressive. the sauce recipes are top notch,
and the cheesecakes are great.

a wonderful thing about this book is that once you master the basic techniques of creating uncheeses, you begin to see how Stepaniak uses them as a foundation upon which to build a repetoire of creamy, cheesy vegan ideas. Then you can start to develop your own versions of traditionally dairy-based recipes.

don't hesitate to pick up this book. And while you're at it, check your supply of torula (nutritional) yeast, onion & garlic powder, cornstarch, pimientos, lemons, tahini, and raw cashews. if you've got that stuff, a good blender, and Stepaniak's Uncheese Cookbook, you're ready to get started!
