That is why I love this cookbook. The recipes are easy, simple, and fast to make yet they are really great. My family loves it too. The recipes are so good that my family does not realize they are eating low carb! Most importantly, this cookbook is one of the reasons I have lost over 30 pounds and kept it off while low carbing. I highly recommend it.

It is definitely my most-often used and most beloved cookbook. Ms. Rysavy's recipes are easy to follow, the ingredients are easy to obtain, and produce reliable and delicious results. This is REAL FOOD for real people and even non-dieters will love these recipes. TLC Cooking provides recipes for homemade low carb crackers, biscuits, condiments, and desserts that allow you to save so much money by not having to purchase the tres expensive and hard to find "Low Carb Specialty" substitutes. So many recipes and every one a gem!! If you follow a healthy low-carb lifestyle you will never regret buying Truly Low Carb Cooking Volume 1!

The recipes are wonderful and easy to follow. Karen has put EXCITING back into having meals that are never boring and YUMMY into foods that you thought couldn't possibly be real and whole AND taste good! From condiments to desserts, I have enjoyed every bite!!!!

I'd purchased every low-carb cookbook I could get my hands on (all via Amazon) and found a few recipes in each one that I could enjoy (and find all the ingredients for!). Then I stumbled upon Cooking TLC - and I can honestly say it changed my life. This cookbook has everything you could possibly think of to make a low-carb lifestyle a happy one. I use these recipes several times a week - if not every single day. Nearly every recipe is easy to make, with ingredients you'll already have (or will have no trouble finding), and tastes spectacular. Imagine this ... muffins and cake on a low-carb diet! If you're on a low-carb diet, or even considering giving it a shot - you owe it to yourself to purchase this cookbook.

Karen has such a down to earth approach to low carbing that it seems much less complicated and scary than other authors I have read. I appreciate that she uses common items that I already had in my kitchen and that I am not destined just to eat salad and meat the rest of my life!!! Her muffins and breads are great too! Buy the book, you won't be sorry!!

Then I got into the meat and salad rut, looking longingly at all my old favorites, the sauces, the casseroles and desserts. I figured doing my own thing in the kitchen was history and that I was doomed to being thinner, but bored. Then I found Truly Low Carb Cooking - and found out that not only could I revisit old friends like chocolate cake, hearty dark bread, barbecue sauce and cheesecake - all made for minimal carb counts - but that this author truly cares about making food both taste good, and be good for you. The recipes are easy to read and follow, the results are delicious, and Karen Rysavy's hints and tips make for delightful and informative reading. I did keep the book but have not made a single recipe in the two months that I have had it. I have looked through it many times. There are no health food stores in our area and there are many products that I can not find. Between not wanting to make a recipe just for one person (my husband will not eat this kind of food)and not wanting to mail order hard to find ingredients, this book has not been very helpful to me.
