Rating:  Summary: A fabulous find, even for the non-vegetarian Review: This book sat on my shelf for a couple of years after I received it as a gift. When I found myself with a vegetarian house guest, I thought I'd page through it to see if I could find any ideas.
Day after day, I found myself returning to this cookbook, making delicious, well-rounded meals. The suggestions for other recipes to add to the meal to complete the main dish were very helpful, and the flavor combinations were simply amazing.
Many of the recipes were somewhat time-consuming (though I'm not one to begrudge time spent in the kitchen, with results like these!), and my youngest (a determined carnivore) rejected more than one meal from here.
Even after our vegetarian guest departs, I suspect that I'll come back to these recipes, as they are exceptionally healthful, without leaving one feeling deprived in any way. On the balance, this is a terrific cookbook to have on hand in case you need to cook vegetarian, or you just want something that will make both your mouth and the scale happy. You might just find yourself using it more often than you expected!
Rating:  Summary: One of my favorites Review: This cookbook is one I turn to again and again for recipes that my non-vegetarian friends will enjoy when they come to eat in my vegetarian home. My favorite recipe is for farfalle with red lentils, artichokes, and feta -- very filling, very easy, out of the ordinary. The banana bread/cake is wonderful if you don't like your desserts very sweet. The apple crepes are popular at brunches, and who could resist burritos made with sweet potatoes and black beans? Yum. I have made many recipes from this book, without ever a flop. Most of the recipes are fairly easy to make, even if they have many steps. I recommend this cookbook highly, especially for people who are trying to please vegetarians and omnivores simultaneously.
Rating:  Summary: Indispensible at home and great as a gift Review: This is a book full of delicious, healthy dishes which are fairly easy to prepare. If you want to move your diet into more vegetarian, less fatty foods, this is a wonderful way to do it. I find myself reaching for this book whenever we have company, especially if our guests are interested in eating well, but watching the nutritional content.
Rating:  Summary: Great Cookbook! Review: This is a wonderful book! My favorites so far are the white bean and pepper dip, the eggplant parmesan (delicious!), lighter lasagna (exquisite), lasagna with Bechamel sauce, caesar salad--and the garlic croutons are yummy--I make them all the time now for tossed salads, the apple crisp (I added fresh frozen organic peaches instead of cherries) is wonderful. The tomato wine sauce is delicious--I've used it with a number of recipes. I really appreciated all the other reviews--they helped me decide to purchase this book, and I'm glad I did. I have another Moosewood cookbook, which I like too, but I am delighted with this as it has lowfat and vegetarian recipes. I've only had this a couple of weeks now, and I a really look forward to trying more dishes! I highly recommend this book!
Rating:  Summary: One of my favorite cookbooks Review: This is an excellent cookbook and my husband and I (and our guests) have throughly enjoyed everything that I have made from it. The macaroni and cheese recipe is so delicious (and different than any other version that I have seen) that its hard to go back to eating the regular (i.e. full of grease) version. A couple of points, however: the stated prep time is often on the short side; many of the recipes are time-consuming (albeit worth the time and effort); many of the recipes call for fresh, cooked and chopped spinach when frozen would work just as well; sometimes too much salt is listed for certain dishes (e.g. the macaroni and cheese calls for a half teaspoon of salt, when none is needed--there is enough "saltiness" from the cottage, cheddar and parmesan cheeses). But overall, this is a fantastic cookbook, with informative and enjoyable notes, introduction and glossaries.
Rating:  Summary: My Favorite Cookbook of all time Review: This is an incredible vegetarian cookbook as well as an incredible low-fat cookbook. I have several Moosewood cookbooks that I love but this is now my ultimate favorite. I love the white bean and roasted pepper dip, I make a new batch every week to bring for my lunch with carrots. The pasta and green bean dish with sun dried tomatoes is so easy and delicious. I am going to try all the recipes recommended in the other reviews! The low-fat cooking tips at the beginning of the book are so helpful and having the full nutrient break down for each dish is wonderful too. What a great book. You really don't feel like you are missing anything. I recommend it to all my friends and family.
Rating:  Summary: Fabulous cookbook Review: This is currently my favorite cookbook. This cookbook makes vegetarian meals taste wonderful and you will never miss the meat (for those of you who think you can't do without it). This book combines ingredients I would have never thought of pairing together and the taste is fabulous. This cookbook is very detailed so you will never be wondering what an ingredient is. Highly recommended for vegetarians and non vegetarians. Great gift too!
Rating:  Summary: easy & tasty receipes, very well laid out book Review: This is my favorite cookbook. It's very easy to use since there is a table of contents at the beginning of each chapter as well as the front of the book. The beginning of each section is marked with a dark colored page so it's easy to find the first page of the chapter. The receipes are very good; there has only been one that I didn't like so far. The author makes it easy to do the receipes, even if you're an inexperienced cook (like me). She explians things in a non-technical way. Ingredients that might be unfamiliar are explained in a glossary. Complementing dishes are suggested with each receipe. She also lists the number of calories per serving (gives serving size) as well as the number of grams of each nutrient (carbohydrtates, fat, and protein). There is a section listing receipes for a variety of tastes. i.e receipes kids will like, vegan receipes, holiday menus, etc. The only thing I have found a problem is the estimated preparation time (not cooking time.) If you are an inexperienced cook, I would double the estimated preparation time. Overall, it's a great book for people who like fish and vegetarian food.
Rating:  Summary: healthy AND tasty Review: This is the best lowfat cookbook I have. And I have quite a few. To eat healthy quite often there's a lot of chopping and mincing involved so although the recipes are easy they're not really fast but its worth it because the meals TASTE GREAT! You don't feel like you're givng up anything. So often in lowfat cookbooks the food is bland and uninspired. The stews, especially, are so yummy my picky children clean their plates. Knowing the night before they had a stew with lots of vegetables and those protein filled beans makes it alot easier to say yes to the one night of MacDonald's when our day is a bit hectic. PS - to mitigate the time factor I make extra - the stews freeze and reheat great.
Rating:  Summary: Incredible! Review: This is the cookbook I have been looking for for a long time! The sweetpotato black bean burrito is fabulous! Giving the time it will take is very useful and having the suggestions on what to serve it with is a great tip!
