Summary: Fantastic, Scrumptious, Delicious, Fabulous...!
Review: In my first year of college, I came to a very important conclusion: I was fed up with crumby, boring food either served in the cafeteria or made on my hotplate. Thus I resolved to learn to cook. I discovered this book and immediately fell in love with it and cooking in general. It's that brilliant! The recipes are flavorful, healthy, diverse, and entertaining and I am actually capable of cooking them! This book is truly fantastic!

I could hardly put this book down. Just like my new morning brew made from soy beans. Taste like coffee, sans the caffeine, and contains no tannic acids. I have no more heartburn and that is something to write about. Google it online under "s oyfee". Great healthy choices for everyone if you: 1) love to cook; 2) love a wide range of foods and 3)can enjoy a meal without meat, this is the book for you too!

Summary: The Best and Most Used Cookbook I Have
Review: Moosewood Low Fat Favorites is simply the best cookbook I own. The recipes are vegetarian (not vegan) but you definetly do not have to be a vegetarian to enjoy these wonderful, delicious recipes. I am a mother of four children ranging from ages 16-5 years and I usually look for easy to prepare, visually appealing, great tasting meals and this book delivers on all fronts.
Here are just a few of my families favorites; Spanish Pepper Frittata, Middle Eastern Chickpeas with Spinach, Lighter Lasagna, Stuffed Manicotti Verde and Eggplant Parmesan. We have a garden that overflows with vegetables and last night I made the Cucumbers Vinagrette a simple dish that was completely gone by the end of the meal. Broiled Zucchini with Herbs is a fantastic way to use up this over abundant veggie.
Each recipe is accompanied by the serivng analysis which includes; calories, fat, protein, carbohydrates, and fiber as well as others items. The back of the book has a Glossary of Cooking Techniques and Terms which is helpful if you are unfamiliar with preparing some of the items in the recipes such as tofu, tempeh, bulgur etc. A Guide to Ingredients section gives a detailed description of ingredients that may be unfamiliar including; asian fish sauce, berbere, cornichons and fenugreek seeds to name a few.
One of the best details is that each recipe has menu suggestions listed under it, for example, Seasoned Steamed Artichokes menu suggestions include; "Try them drizzled with Yogurt Tahini Dressing before Middle Eastern Chickpeas with Spinach or with Tabouli Salad with greens." It takes the guesswork out of meal planning. This is a great cookbook!

Summary: It Had to Happen Sooner or Later
Review: My first few attempts to use this cookbook were very disappointing. The recipes were not incorrectly written or missing steps, it was the overall outcome. "Almost Fat-Free Cornbread" had a neat rustic look, but was dry and had a bitter taste that had to be drowned out by butter, defeating the purpose of being almost fat-free. I could tell that "Southwestern Hominy Stew" was going to be bland long before it was even finished. There just weren't enough spices used to enhance the broth and combat the starchiness that seemed to overpower. Even the freshly roasted peppers couldn't help this sad soup out.

Interspersed throughout the book, there are few redeeming recipes. The "Spring Vegetable Paella" is delicious and leaves room for experimentation. Make sure you use quality ingredients and don't skip the saffron or you'll be disappointed. The "Cassoulet" would be just another recipe for vegetarian baked beans if not for the use of the flavored seitan. It gives just enough "meaty" flavor to bear a resemblance to the classic French dish.

Overall, I doubt I'll use this cookbook very often. Low-fat vegetarian in this case is an oxymoron. If you are a vegetarian who is worried about fat may find this a useful cookbook. For those who want more flavor, consider one of the other fine Moosewood Restaurant cookbooks.

Summary: I use this cookbook all the time!
Review: My husband and I love this cookbook. The meals are delicious and very healthy. I love the fact that the recipes use so many fresh vegetables. Also, they taste great without using much fat because of the wonderful combinations of spices and herbs. There are many fabulous one-pot meals that taste even better the next day. Plus, there are detailed instructions about unusual ingredients, especially spices that are often in the Asian and International sections in my foodstore. I have learned about a lot of new spices and sauces with this book. I don't know what we would eat without this book! I give it my highest recommendation.

Summary: A Must Buy for People Interested in Yummy & Healthful Food
Review: OK, I admit it. I'm one of those people who buy cookbooks, but rarely get to the making the recipes stage. This is one of the few cookbooks I own, that I actually *use*. Why? Everything that I've made has been easy (no funky ingredients, no bizarre food appliances required), quick, and tasty. Although everything is vegetarian and low-fat--the food just tastes good. You don't feel like you're eating healthfully, you just acknowledge the goodness of the food (if that makes sense). Two of my favorite recipes are the pasta w/tomatoes and chickpeas (sounds bizarre, but very good) and the low-fat chocolate pudding. As somebody who has always bought Jell-O instant pudding, it was a revelation to realize I could make homemade low-fat chocolate pudding that was just as easy as opening up a box of Jell-O and 10x better in taste!

Summary: Another winner from Moosewood
Review: Simply outstanding. This lavish collection of recipes, from nibbles to desserts, is a cornucopia of delicious dinner ideas. Everything I've made has been delicious, from their cassoulet to Chinese orzo pasta salad. Fish may not belong in a vegetarian collection, but it's nice to see it here in various tasty guises--the Thai-style fish cakes are superb. Although this is not billed as a "quick and easy" book the way that Moosewood Cooks at Home is, most of the recipes involve minimal fussing. I find the collective's estimates of cooking time pretty accurate, and the hints for dishes which pair well together often send me hop-scotching through the book considering new meals. Take the serving sizes with a grain of salt--if they say it feeds four, it probably feeds six; if they say it feeds 6-8, invite the neighborhood over to help you finish the leftovers! But for delicious, healthy, imaginative food, I've found few books to equal this one. I expect to happily cooking my way through Moosewood Low-Fat for years to come.

Summary: one-stop source for flavorful low-fat
Review: Since I bought this book -- it has been my only source for ideas -- recipes are simple, many variations and serving suggestions send you to discover whole new tastes. I especially like that they have a breakdown of very lowfat recipes and those that take a half-hour or less. the best moosewood book ever!

Review: The best overall cookbook I own. Not just for vegetarians. Not just for people watching their diet. For everyone who enjoys easy to follow directions, easy to find ingredients, and recipes that turn out "good enough for company" on the first try. Also includes a helpful chapter on nutrition facts for those who are just starting a healthy eating plan.
