Rating:  Summary: Busy cook's dream! Review: My family needed to start eating better, but with both of us working full-time I always thought we didn't have the time. Then I bought this book. Most recipes can be made with very little prep time and best of all it uses "normal" ingredients that you can find at any grocery store. I also loved the suggestions for what to keep onhand at home to make quick healthy meals. An excellent resource!

Rating:  Summary: Awfully bland Review: The concept is a good one but the recipes aren't tasty. I cook quite a bit and was looking for one cook book I knew would be quick and easy- this isn't it. Some of the recipes are not what I consider healthy - due to fat grams, calories as well as suggestions for buying prepackaged/prepared food (that is no where near healthy in my opinion).

I recommend checking this book out of your local library before buying it, to be certain there are recipes or techniques in it that you will find useful. The book contains many very basic recipes, like microwaved baked potatoes (do you already know how to put 4 potatoes in the microwave oven?). Another example: chicken and salsa (ingredients? Chicken breast and salsa). I use "American Heart Association's Quick & Easy" and "American Heart Association's Meals in Minutes" cookbooks FAR more often than this one. I only found 4 useful recipes in this cookbook.

Rating:  Summary: Easy, not fussy, tasty, pleases even non-dieters/diabetics! Review: These recipes are easy, they use "normal" ingredients that you can find in even average grocery stores (I cannot find fancy gourmet ingredients where I live), and best of all--the recipes are tasty! This cookbook was recommended to me by our employee wellness program about six years ago, and I have enjoyed using it. I share with some folks who are not dieting or diabetic or otherwise particularly concerned about food issues, and they like the recipes too. That's high praise, and unusual for this type of food. The nutrition information, recipe alteration advice, and shopping list prep helps are nice features. You'll learn a lot in general, as well as having great recipes. Enjoy!

They are very simple, and for a person with practically no kitchen experience, much less experience with healthy cooking, these books may make a decent primer.However, she does call for a LOT of processed foods. The sodium content in most of the dishes is insane. Many of the recipes are so basic that even the inexperienced cook might feel insulted that they were included in the volume. There are at best a half dozen recipes in volume 1, and NONE in volume 2 that I currently use. My need for healthy cooking goes far beyond what little she offers. Unless you are a brand new cook with limited resources who just wants to get your feet wet with healthy cooking, I would recommend against purchasing this book.
