Summary: This should be called "The Cheese Bible".
Review: The author of this book, Ed Edelman, of The Ideal Cheese Shop, Ltd., in New York, has put into one volume all of his years of experience with cheeses. I've bought cheese by phone from his store for several years, but have never been there, have never met him in person and did not know this book existed. I felt I had discovered a treasure when I found the book (which is out of print, but is available from Amazon). He has always given me great advice. How wonderful now to have this book to take to my local market. I've learned so much from the information in the book, and find the recipes both easy to follow and delicious. Ed takes the mystery out of cheese buying and provides well-written information on selecting, storing and enjoying cheese.
