Rating: Summary: Good & Easy Recipes Review: After borrowing this book from the library, I hurried out and bought a copy. I get a lot of cookbooks from the library because I really only want one or two recipes in them. This book contained so many interesting recipes I wanted to try that it was well worth the price. I wanted to eat more bean-based meals, but I thought, how boring is that? Instant Bean brings beans to life with down-to-earth recipes that incorporate healthy amounts of legumes, but are not necessarily bean-centric. I appreciate this streamlined approach that makes room for more recipes, but I give it four stars for two reasons: not enough recipes for "Main Dishes," and not enough explanation of some of the more uncommon ingredients. Compared to other bean cookbooks and bean recipes in vegetarian cookbooks, I think these recipes are much more flavorful, faster and easier. (This book is not strictly vegetarian.)

Trying to incorporate beans into my diet for health reasons, I was tired of the same old recipes again and again. This book was one of the better that I ordered. I only give it 4 stars because there are no pictures. However, what impressed me was that most of the recipes are low fat. Also, there is a great diversity of ideas, including soups, appetizers, dips, salads, main dishes, side dishes, etc. One is not limited to eating beans only as a main course. It also does not limit the recipes to dishes made exclusively of beans, but dishes that include beans. I recommend it to anyone who is just trying to eat healthier, vegetarians who must eat beans for protein or those who just enjoy the flavor and texture of beans.
