Summary: this is one of the most authentic spainish cookbooks ever!
Review: Having lived in Spain for many years, and having a passion for cooking authentically, I was elated to discover this book. The recipies contained within it's pages are true and unchanged from their Iberian origins. Most of the Spainish cookbooks I have read seemed to me to be a bit Americanized. Mr. Emery's book is not. I would highly recommemd it for serious Spainish cooks.......the Tapas.....the seafood...... the paella.....the lamb.......the cocido.... Wow what a book!!
