Rating: Summary: Low Fat Cooking With Positive Reinforcement for Daily Living Review: I love this book and have used it faithfully since it came out. The format is unique--more like a daily guide for eating healthier "one day at a time." Claessens gives one recipe each day along with positive messages to make healthy lifestyle changes. She also makes an effort to match seasonal foods to the time of the year. The recipes are tasy and for the most part use readily-available ingredients (try the lasagna-like polenta dish, waldorf salad made with pears and the creme brulee). The index in the back of the book is a must to find favorite recipes again. It took me a while to figure out that a complete list of chicken recipes is under "main dishes" (only a few of the entrees are listed under "chicken"). My book was damaged recently, so I'm buying another asap.
