Some of the recipes that we whole heartedly endorse from the book are: 1. Shrimp with Coconut (Udand Kelapa), 2. Coleslaw Dressing, 3. Crispy Waffles, 4. Vegetables Al Forno, 5. California Bouillabaisse.

There are more recipes we have tried and enjoyed as well. The book is a bounty. Like Colorado itself, the book represents a colorful array of cultures, tastes, nutritional choices, ideas, and menus for everyday and special occasions.
