It has been used in instititutional cooking and is wonderful I am greatful that I purchased one of the first printing, and the fourth printing and they are wonderful.Thanks to all that had a hand in providing this outstanding cookbook. Anyone that enjoys cooking should own this book, It is a treasure and makes wonderful gifts.
