Rating: Summary: a reader from maine Review: I figured, you could boil and fry and egg and there wasn't much more to it, but hey! There are so many things, from appetizers to full meals based on this staple. The old classics are presented here, of course, and instructions to make sure you get it right, but fancier, more elegant dishes are also here, so if you only have that carton of eggs in the fridge and not much more, you can still whip up something interesting!
Rating: Summary: Not so good Review: I own more than 350 cookbooks and this is one of the best! Most times I glance through pictures and recipes, but not this one - I read this book from cover to cover. It's that good. The recipes are easy to follow and simply terrific. The instructions for making hard-cooked egg is so simple and fail-proof and learning this method alone made me wonder why this was never presented in all other books and magazines that I own. This book is highly recommended!

Rating: Summary: a reader from maine Review: I really like this book. I have three other cookbooks by marie simmons and they are all terrific. I have made 3 quiches and 1 egg salad and 1 strata recipe and they were all easy and delicious.
Rating: Summary: Not so good Review: I was very disappointed that this cookbook is basically the same dozen recipes with some minor changes in added ingredients. I was hoping for some new ideas on using eggs, and got same old. If you have never cooked with eggs at all it might be useful, but every basic cookbook has omelets, quiche, egg salad, custard, etc. and anyone with imagination can come up with their own flavoring and add in ideas. I bought it along with the "Totally Eggs Cookbook"for 1/4 the price and with less than 100 pages, and got more new ideas from the latter.
