Rating: Summary: easy and authentic Review: ...........and original, with simply marvelous desserts. This cookbook is wonderful because it offers a lengthy introduction that gives information to it's readers about the history of Afghanistan, the country's social and culinary traditions, it's special religious festivals, and takes us through the typical Afghani kitchen, explaining in terms that novices to the cuisine can easily understand. The recipes are divided into chapters including "breads" (we really enjoyed the "roht" recipe), "soups", "snacks", "pasta and noodles", "eggs", "kebabs" (which are a real treat!, try the do piaza), and "main dishes", "vegetable dishes", "pickles and chutneys", "fruits and desserts" (loved the sweet rice with fenugreek, sweet sticky rice pudding), "pastries, sweets and biscuits" ("elephant's ear, sheer payra were great, although the sheer payra needs about twice the recommended powdered milk), "jams and conserves" and "beverages".We are still really discovering this cookbook, and it has already enriched our culinary experience. This cookbook is a great way to learn about and experience the cuisine of Afghanistan.
Rating: Summary: Thank you Helen Jhan ! Review: I am an American married to an Afghan and this book has made it possible for me to cook all of my husbands favorite dishes. I also now am able to cook for my two boys Chris and Jon so when they visit relatives they can appreciate the food of their culture. Many of the dishes I take to parties ie: buranee, chalow's and oh yes, the kebobs! I have heard "through the grape vine" and having been told by MANY of my Afghan relatives that I cook like "back home". This really makes me proud and I am sure for my husband too. Rating: Summary: The best Afghan cookbook written Review: I just can't say enough good things about this book!! My husband has fond memories of going to restaurants with his father and having delicious food. I wanted to be able to recreate those memories. I began searching the Internet for Afghan cookbooks and recipes nearly 10 years ago. I finally found this book, in its first edition, yet was not able to obtain a copy. After finding Helen Saberi through the Internet, she informed me that her book was coming out in second print. I waited nearly a year for it! And it is well worth the wait. Helen's recipes are more authentic than others that I have found; others have been "westernized". While she may have substitute ingredients, I think she stays true to the original recipes. The directions are easy to follow - you can't go wrong. The snippets of culture and history and background of spices just add to the flavor of the book. I continue to delight family and friends with these delicious Afghan dishes.
Rating: Summary: ROHT RECIPE` Review: I RECENTLY PURCHASED THIS AFGHAN FOOD & COOKERY BOOK AND I WAS VERY EXCITED TO TRY ONE OF THE RECIPES. I TRIED BAKING THE ROHT AND FOLLOWED EVERY DIRECTION THAT WAS IN THE RECIPE. UNFORTUNATELY THERE WAS NOT ENOUGH LIQUID RECOMMENDED TO MAKE THE DOUGH. I BELIEVE THERE IS A MISTAKE IN THE AMOUNT OF OIL AND WATER. IT SAID TO PUT 3/4 CUP VEG. OIL AND 3/4 CUP WARM WATER. BUT FOR 5 1/4 CUP OF FLOUR, THIS MUCH LIQUID WON'T DO. I WAS LEFT SURPRISED BECAUSE I DID EVERYTHING RIGHT. SO I ADDED MORE OIL AND MILK INSTEAD OF WATER. I ALSO ADDED MORE EGGS AND SUGAR. The recipies in this book are very straight forward and surprisingly easy to prepare. It seems to me that a great deal of effort was put into preparing the book because it has extensive cultural notes about the recipies and the country itself. The only gripe I have about the book is that the cover tends to bend outwards really easily and stay bent, but that doesn't subtract from the enjoyment of book.

Rating: Summary: I'm very pleased with this book! Review: Like the reader from Sonoma, I am also an American married to an Afghan. I always tease him and tell others that I married him for his food. We live a few states away from his family so if I want my favorite Afghan foods I have to cook them myself - which is what I can do now. My husband and I are quite pleased with the results so far. And the background into the Afghan culture and customs the author provides is an added bonus. It's neat because there are "answers" to questions that I've asked his sisters and they didn't know - they just do what Mom, Grandma, Great-Grandma... do/did.
Rating: Summary: A delightful book with tasty dishes Review: My fiance gave me this book last summer as an addition to my ethnic cookbook collection. Since then, we have been delighted with every recipe we tried; nan, sabzi qorma, pilau, chalau, kicheree quroot, khagina (it's like frittata full of vegetables), turnip bata, sherwa-e-shamali-war, etc. I think they are somewhere in between Persian and Indian cookery. I prefer to cut down oil and sugar, and dishes still come out delicious. If Mrs. Saberi works on an expanded edition in future, more culture and history information will be nice. Beautiful line drawings accompany the text.

My mom is the best Afghan cook ever but when I try to learn from her, it is very difficult because she doesn't use exact measurements. It's usually a handful of this or a pinch of that... This is the first book I have found that makes it SO easy to follow and cook the best food in the world. The best part is- it's in plain english!
