Review: I am often stumped on what to serve for a mixed gathering of vegetarians and non-vegetarians. I am glad now to have an arsenal of delicious cheese recipes that everyone will love. Many of the ingredients are easy to keep on hand for appetizers in case of last minute guests. The casseroles for main dishes are divine comfort food. I highly recommend The Vegetarian Cookbook for Cheese Lovers to add new recipes into your routine.

Summary: Rennet Means Cheese Not Always Vegetarian
Review: I have not read this book, and so cannot comment on its contents specifically (thus the one star only--I don't know how many stars it really rates). What I wish to do is point out the common fallacy that cheese is necessarily a "vegetarian" food and wonder whether the author explains this point in her book. I think it is important to remember that if one is practising vegetarianism for compassionate reasons (i.e., the desire not to eat products that result from cruelty to animals), one has to keep in mind that many cheeses are made with the product "rennet", which is often derived from enzymes taken from calves' stomachs. Thus, most vegetarians either seek out cheese marked "made with vegetarian rennet" or simply don't eat cheese altogether. Of course, the problem is easily solved for vegans, who choose to eat/use no animal products at all.

Review: I have this book and it is excellent.

I am a lacto ovo vegetarian and the reviewer below is wrong.

The accurate definition of a vegetarian is one who lives on a diet of vegetables, nuts, fruits, grains, and sometimes animal products AS IN MILK AND CHEESE.

This was Merriam-Webster's dictionary definition, not mine.

Please don't let anyone make you feel you are less of a vegetarian because you eat dairy that contains rennet. We live in an imperfect world, and being a lacto ovo vegetarian, without getting neurotic about the rest, is fine. It's better than eating meat, or even fish, which some folks do, then start complaining about those who eat cheese with a little rennet.

Don't let anyone let you feel you are less of a vegetarian because you don't have the resources to trudge 10 miles to a natural foods store and find animal-free rennet cheese.

You are doing just fine the way you are, and YES you are a vegetarian, according to the dictionary definition. Animal-by products are in everything. Just do the best you can!

Review: I'm not a vegetarian, but isn't it healthier for us to eat meat sparingly? These recipes are flavorful and fun. Why not have some nonmeat meals for a change? A great recipe book to add to a collection of cookbooks that will see use.
