Description:

The name is funny and the cover is cartoonish, but this book is no joke. It is so filled with appetizing recipes that it is virtually impossible to pick up without immediately experiencing a fierce craving for chicken. Consider the following recipes selected by randomly flipping pages: Chicken Thighs with Nectarines, Sautéed Chicken Breasts with Lime and Ginger, and Drumsticks with Smoky Bacon and Corn. Choosing just one to make for dinner tonight is the hard part.

All of these recipes are quick and easy to prepare. Charles Pierce, the author of several other cookbooks including Burgers and Soup in the Comfort Food series, serves up recipes that are economical to make in terms of both expense and time. Thanksgiving Chicken Thighs has just seven ingredients and, unlike the Thanksgiving turkey, takes only about an hour to prepare and serve. Baked Chicken Breasts with Spinach, Goat Cheese, and Pine Nuts also has seven ingredients and is suitable for family meals or entertaining. Other recipes such as Chicken Breasts with Lentils and Sausage (14 ingredients) are slightly more complicated, but the end result makes it worthwhile.

Conveniently organized by chicken part--breasts, thighs, drumsticks, wings, livers--the recipes have clear, easy-to-follow instructions. All are for six servings, which is a larger quantity than most cookbooks call for these days, but what is better than knowing there are chicken leftovers in the refrigerator? --Brenda Pittsley
