Summary: Classic, tasty and diverse
Review: This was the very first cookbook I ever bought. I had drifted away from eating meat without even noticing, the first time I ever had to fend for myself in the kitchen. After a couple months of eating eggs and cheese I concluded I had to learn to really be a vegetarian. This book helped me understand the basics of a healthy diet that wasn't just "meatless", it had totally forgotten about meat.

There are some recipes that are just plain nice to know about like the fruit compote from dried fruit, some of the delicious non-yeasted breads, (I'm too distracted to make good yeasted breads without my bread machine), and the various sauces for vegetables. It would be lovely to make everything from scratch like Laural and company did, but I just don't have the wherewithal to spend that much time in the kitchen anymore.

I was vegetarian for 14 years but started eating meat again when pregnant the first time. Now that my children are getting older and able to appreciate foods that are combined, I plan to get out my copy of Laural's Kitchen and use it more. Even if they balk, I'll be adding various side dishes, some of the lovely sauces so I can dress up my servings of vegetables and introduce my kids to more vegetarian dishes. Even while I haven't been using these recipes, I've appreciated the comprehensive nutrient charts as a reference.

Summary: Tony Shalhoub loves it!
Review: Vegetarian delight! I am Tony Shalhoub and I love this book. Mesh (who needs to clean it up) and I used to read this book with Winona (who, like Mesh is also a no-good hippie).
I remember when Mesh spent the night at my house (IN EGYPT!) He put the milk in my cabinent and the cereal in my fridge. Clean it up, Mesh! He's put my underwear in the oven to dry it. Now it's burned. He said he used to teach in India with Kublah Khan! Mesh Married him to a bagel named Susan. It's all true, exept that they were married under the Modoc Moon! Carol Lee, you need to clean up your son! I'm Tony Shalhoub, and that's how I feel. You indecent hippie and mother of Mesh! Oh and Leonardo Dicaprio called, he wants a new stunt double.

Summary: Great For Omnivores Too
Review: We really like this cookbook because it has a LOT of great recipes in it. The fact that most of them are good for you is a bonus.

My two favorite recipes are the Oatmeal School Cookies -- an excellent example of using whole wheat flour and wheat germ to create a delicious snack -- and the base Tomato Sauce. The tomato sauce can be made as a base and adapted to Italian or Mexican entrees pretty easily.

I would love to see a follow-on edition with some non-US dishes featuring as cous-cous or hummus.

Summary: A classic!
Review: We've been vegetarian off-and-on for several years. After my husband's brother got colon cancer at the age of 47, I switched my kitchen to vegetarian for good. At that time, I went looking for cookbooks that offered something out of the ordinary -- a cookbook that didn't just offer up weird tofu loafs or butterfly-chasing nuts and berries. We're a REAL family in the REAL world. The recipes in this book are just down-home good cooking. Recipes you could make even if you weren't vegetarian. THAT'S what I was looking for. Every recipe can be adapted to suit your own tastes, and you can add and subtract today's convenience items (like prewashed veggies, rice in a bag, gourmet canned sauces and beans). Our favorites are the tamale pie (spiced up more to reflect our heat-loving palates) and the sweet potato salad (very unique!).

Summary: THE guide to vegetarian eating I was looking for
Review: When I decided to become a vegetarian, I wanted a book that had every kind of good recipe and that would give me the nutritional information I needed to convince my Mom it was OK. Laurel's Kitchen was THE BOOK. After many years, it is still my favorite source for recipes. Whenever I decide to make some big change in the way I eat, I use the tables to make sure it will cover all my nutritional needs. There just isn't another book out there like it.
