Summary: Beautiful, practical, and funny. This cookbook delivers!
Review: Grady Spears's cookbook is the greatest. I bought it for my husband (the meat and potatoes type) who loves to cook, but really hates bland food. Each recipe has a short description that includes the origin of the recipe as well as serving suggestions. The variety of recipes, from the hearty Oven-Roasted Tenderloin of Pork with Apple Poblano Chutney to the mouth watering Bacon-wrapped shrimp with onion marmalade, ensures that this is more than just another regional cookbook. Some of the chapters include: "Chuck-wagon game birds and seafood," "Dutch Ovens and One-Pot meals," "Potatoes, Vegetables and other Touchy Subjects," and many more. This is one of those cookbooks that you will enjoy reading as much as you enjoy trying the recipes. It's well worth buying!!

Review: I absolutely love this cookbook with some great stories! The Reata Grill Blend & Pasilla Powder are new staples in my kitchen. I've tried lots of the recipes & have loved everyone of them--can't wait to try some more. My all time fave is the Cream of Jalapeno soup.

Summary: Visually beautiful book with accessible, interesting recipes
Review: I was first drawn to this book by its wonderful photography showing landscapes and people of West Texas, the writing style is comfortable and drew me into the story of cowboy cooking. The recipes are all very accessible, Texas cowboy comfort food! but not quite what you might expect to roll off the chuckwagon. The variety of recipes is surprisingly strong, and are all accomplishable by everyday cooks and beginners. The sidebbars scattered throughout the book give a good sense of ranch life. This one will be in my kitchen book shelf a while!!

Review: I was recently given this book as a gift from a friend in Texas. The recipes are so wonderful that I'm planning a trip from Colorado just to eat at Spears's restaurant! Anyone who reads this book, from the amateur cook to the professional, will find inspiration in it.

Review: OUTSTANDING ORGANIZATION.FEWER RECIPES BUT VERY COMPLETE.EASY TO FOLLOW.ESPECIALLY THE INFO ON GETTING THE RIGHT INGREDIENTS.ILLUSTRATIONS ARE ON THE RECIPE PAGE,FOR A CHANGE-VERY HELPFUL.PRACTICAL AND ELEGANT.A GOOD READ JUST BY ITSELF.THE SECTION ON BEEF AND BUYING BEEF IS BETTER THAN THE TEXAS BEEF COUNCIL ADVICE. A GOOD BUY AND REASONABLE.THE RECIPES GIVE YOU SOME OF THE MOST OUTSTANDING FOOD YOU CAN COOK YOURSELF.

Summary: The best collection of TexMex-Trans Pecos recipes in print
Review: Received Cowboy in the Kitchen as a present last Christmas. Having eaten at the Gage Hotel, Marathon and the Reata in Alpine Texas, where Grady Spears was chef, I couldn't put the book down until I read it cover to cover. It's an outstanding collection of authentic Trans-Pecos and Big Bend stories and genuine ranch-hand recipes with a touch of TexMex-New Mexico flavoring. Just try a couple of the recipes and you're lassoed on the book and recipes.

Summary: Excellent Cook Book the way they ought to be!
Review: The recipes from this outstanding cookbook are always requested at my house. The Reata Blend is kept in the house all the time and used on all different types of foods. Grady did a wonderful job giving us a cookbook that is traditional Texas Cuisine and not all the low fat no-flavor recipes that are so common today. Try scorching a steak with some fresh cilantro butter the way Grady does.Mmmm good!

Summary: A unique and wonderful book of artful Cowboy Cooking
Review: This book has provided two new staples for my kitchen: the Reata Grill Blend and Ancho Chili Ketchup. They work magic on mundane dishes and create the illusion that I'm a better cook than I am. Also, the Chicken Fried Steaks are the best around
