Rating: Summary: Vegetarians can Substitute for Yummy Dinnners! Review: I am a vegetarian and I have used this cookbook and substituted the meat with seitan. It is really delicious! The best thing is that the meals are easy to prepare and not overwhelming like most cookbooks of this nature! I recommend it highly for all - but also for vegetarians who may not think that this book has anything to offer. If you can get past the "carnivorous" descriptions of some of the preparation descriptions of some of the meals and simply replace the meat with a more gentle and compassionate substitute - you will be delighted. Vegetarians may think that substituting is too complicated and that it's better to just buy a vegetarian cookbook (and in most cases this is true). In this case, however, it is so very easy to just substitute seitan or tofu, as the rest of the ingredients are all vegetarian (except for fish sauce which is easily replaced with soy sauce or "faux fish sauce" that you can purchase in chinatown if you are lucky enough to live near one). Of course, it would be WONDERFUL if Nina Simonds created a Vegan or Vegetarain version of her noodle book!! :)

Rating: Summary: Good, but not Definitive Review: I bought this book hoping that it would prove to be a definitive text on Asian noodles. Although that's not what I ended up with, I am happy with the book. Whereas, I thought this books would contain information about the history of Asian noodles and traditional methods of making/preparing them, what I found instead was a good beginner-intermediate recipe book centered around noodles. If you're looking for a book that is culturally rich, you'll have to look elsewhere. If you simply want to learn how to make some delicious noodle dishes you've come to the right place. All of the recipes are simple, straight forward, and produce great tasting results (at least the ones I've tried so far). The author limits herself to dealing with ingredients that are fairly common at American Asian markets, so it should be easy for readers to track down the supplies they need to get started. I suspect there are better noodle books out there (though I haven't found them yet), but this one seems like a good starting point for those interested in Asian cuisine.
Rating: Summary: A winning noodle! Review: I love this cookbook! Noodle basics and Using the Noodles provide an excellent background in the selection and preparation of the huge variety of Asian noodles available. The recipes are well written, easy to follow and the results are excellent! Once you master basics of her sauces, it's very easy to improvise and make delicious meals with just about anything you have in the refrigerator. Favorites dishes include: Chicken Noodle Satay, Seafood Hot Pot, Grilled Pork with Rice Stick Noodles, Curried Coconut Shrimp on Rice Noodles, Spicy Beef Janataboon. Least favorite: Pad Thai.
Rating: Summary: Well written, well photographed, great food... Review: I purchased this book several years ago for the sheer pleasure of viewing the lush photography. In addition to this attribute, the recipes are simple, well written and delicious. I am fortunate to live very close to Boston's Chinatown, so have access to several Asian grocers, but have found almost every ingredient called for in this book in a traditional grocery. Originally from the mid-west, where this type of cuisine is unheard of or done badly, this was my introduction to cooking in the Asian style. I continue to come back to this book again and again. I second the opinion of a previous reviewer regarding the sauce and marinade section at the end. Fabulous. If you are interested in created delicious, simple Asian dishes, and are unfamiliar with the cuisine, this is an excellent choice.

Rating: Summary: Yum!! Review: I'll bet these noodle dishes would make good leftovers, but my husband and I have never failed to clean our plates when we've made a meal from Asian Noodles. The recipes are relatively simple, yet full of flavor and surprisingly diverse for a cookbook based around a single ingredient. This book in now a weeknight favorite or anytime when we want a good dinner but don't have a lot of time to cook.
Rating: Summary: Waste of money Review: If you like recipes that don't work, sauces that don't thicken, then this is the book for you. It's a collection of poorly written recipes that I would recommend you don't waste your money on.
If you're serious about Asian cooking, don't waste your time or money with this book.
