Summary: Inspiring Recipes
Review: Absolutely fantastic. Ms. Ojakangas gives us everything we need to be successful bread bakers -- from the information in the Introduction which lays a great foundation for the novice or those unaware of the "science" of breadmaking to the variations in technique for each recipe using the different types of preparation (hand, bread machine, and food processor). Since I'm usually baking for only myself and my husband now, I found the recipes for "sampler" loaves especially helpful. I've baked some before, but I do much more now with this wonderful guide. And I've even been inspired to be more creative on my own.

Summary: Inspiring Recipes
Review: As everyone else is saying, the way the book is put together is fabulous--showing you how to make each recipe in multiple ways, and different sized loaves. I love that!

What really makes this book my favorite of all, however, is the recipes! I just got the book, so I haven't tried many yet, but I'm experienced enough to know what looks good, and her recipes look savory and mouth watering! Reading the recipes makes me excited about baking. It's obvious that she loves to bake, and with her it feels like real baking, not just putting ingredients into a bread machine.

With other books, I'm often dissapointed by the lack of imagination in the recipes--not so with this book. There are plenty of basic recipes in this book, but also plenty of surprising, wonderous recipes. Beatrice knows how to add a few special ingredients, like 1-inch chunks of cheese, or beer and dijon mustard, or molasses and maple syrup, to create an inspired recipe.

Other things I appreciate:
--The unexpected desert recipes, and dinner recipes, that use the loaves you've made.
--That the recipes are original, but not so different that I need to re-stock my kitchen for each recipe. Great.

Review: great multi-grain breads! Excelant flavors! I have had no trouble finding ingredient, evan in the relitively small town I live in. Every recipie I've tried has turned out excelantly. No loaf has lasted more than two days!

Summary: I have found me way
Review: I first became interested in baking bread since I felt it to be the most challenging cooking/baking a person could do. And challenging it was - rock hard loaves, loaves that never rose.... Then I got a breadmachine from a family member. Looking for recipies, I happened on this book (3 days ago). After two successful loaves, I love it! It gives me the flexibility to knead and rise my bread in my breadmachine, then bake it in the oven. It lets me know how to troubleshoot any problems. It lets me drop ingedients to meet my families allergies. And, above all, I make my house a home. People rush to the stove to get a smell, I get applause over the results, and I can't wait to get home to bake antoher loaf. I'd recoomend this book to any beginner bread maker!!!!

I would not really say the recipes are whole-grain as written, since generally there is twice as much white flour and whole-grain flour, but I usually change the ratios when I use these recipes (2 c whole grain flour to 1 c white flour.) It also orders the ingredients for bread machines (putting the yeast last) which has been a bit annoying, but many modern bread books now are based on bread machines, so I can't complain too much. The sweet breads at the end of the book are wonderful. One of the reasons I got this book was because of the large number of Scandanavian recipes, and I have been very pleased with them. I also love the fact that there are three different loaf sizes. It is nice to try the sampler loaves without doing all the math! I usually end up doubling the recipe for the largest loaf since my family loves bread. I do recommend this book.

Summary: Best Whole Grain Bread Book Around
Review: I have never taken the time to write a review on a book that i have purchased from Amazon. Thanks to all of you who do. This time was the exception. This book is incredible! Every recipe can be tailored to your stlye of breadmaking. It has directions for a bread machine, mixer, or the old fashioned way. I have tried a half dozen of the recipes so far and they are all delicious. My compliments to the author. The money has been well spent. Thanks!
