We never realized how unnecessary meat was to great cooking and a good cuisine until we started using this book. Rating: Summary: My new favorite cookbook Review: I've read all 83 (whew!) of the reviews here so far and find it quite interesting that only a handful of them are negative. That so many people clearly love this cookbook only confirms my own impression. I've made dozens of recipes from this book and now trust it so completely that I will make special company dishes without having tested them first - and this is the only cookbook I have that gets that honor. The roasted eggplant lasagna with garlic bechamel is sublime, the carrots braised in honey, butter and fresh thyme is a delicious new twist, the sweets in back will delight your taste buds, and the vegetable section is well organized by ingredient. The recipes range from very simple to more complicated, but no recipe is too intimidating, no matter what your cooking experience.The food in this book has led me more towards becoming a vegetarian than any of the other vegetarian cookbooks I've ever had. No dish I have made from it has turned out bad. I find Madison's approach to cooking refreshing, really allowing the flavors of the foods to take center stage, instead of relying on long ingredient lists, complicated sauce-ery, or other gimicks to do what the ingredients ought to be able to do alone. Yet none of the dishes sacrifice flavor. I bought this book in paperback three years ago and have used it so much, the spine is cracking badly. Just go ahead and buy it in hardcover - you won't be sorry. I've recommended it to friends who enjoy cooking and cookbooks as much as I do. None of us are vegetarians. But without fail, all of them have come to love this cookbook, and most of them are pretty sophisticated cooks. Unless you are a culinary cynic or have rigid opinions about cooking and food, I don't think you can go wrong with Vegetarian Cooking for Everyone. It's a real winner.
Rating: Summary: And Everything Tastes Good Review: Wonderful compendium. But what surprised me as a somewhat new vegetarian cook was how flavorful the recipes taste. Everything I've tried has been satisfying. My non-vegetarian husband loves the book.

Including some root veggies that very rarely saw my frying pan until this book. For the $$ & the amount of recipes, this book gets a top score. Yeah. All very simple & easy to follow.

Rating: Summary: Vegetarian bible Review: I am not a vegetarian, but love to cook vegetarian dishes with the wonderful fresh produce available year-round in California. It is one of the best cookbooks I have ever used -- a staple from the moment it entered my life.Every recipe I have made from this cookbook has been excellent, and I love the way it is so complete and compendious, so that you can find every ingredient, condiment, technique, ethnicity, type of meal, etc., within it. I will be giving this book as a wedding gift to at least two couples this year. I cannot recommend this cookbook highly enough.
Rating: Summary: This book is the source for cooking vegetables Review: I love this book! It is the authority on cooking vegetables in simple, yet interesting ways. You can look up just about any vegetable and there are recipes on how to prepare it. There are also great sections on different types of sauces and marinades. If you know someone who is getting married, this is a great shower gift.
Rating: Summary: Vegetarian food can be great! Review: Nothing frosts my bottom more than those self righteous I am better than you because I don't eat meat types. If I have to listen to another self-absorbed Birkenstock wearing, VW driving, tree hugging, never worked a day in their life, pencil neck vegan drone on about the benefits of vegetarianism I think I'm gonna heave up my steak tar-tar. So I figured I would learn a little about vegetarian cooking before I decide to pop the next wheat grassaholic that spouts off at me right in the kisser. So that in a nutshell is why I bought this book and it is a very well done book. There are a wide varieties of recipes and granted I have not tried them all but the ones I have tried are outstanding. So aren't I the one with egg...er...tofu on my face. I never thought I would admit it but this type of food is palatable even for a hard core steak and whiskey guy like myself. One minor criticism. If you add meat to any of these dishes they taste 100% better.
Rating: Summary: THE veggie cookbook, a culinary miracle Review: I was skeptical of this book after finding Madison's *Greens* cookbook strangely fussy and insubstantial: far too much butter and cream; too many recipes for tarts, pizza, salads; ingredients I'd have to go on urban safari to acquire (borage? cockscombs?). This is a different text altogether. The recipes are elegant, simple, and spectacular. Madison's commentary is straightforward, but again and again she demonstrates beautiful taste, and a truly wonderful appreciation for her ingredients. The Quick Peanut Sauce, for example, takes five minutes and is an almost miraculously balanced dish. It's the cilantro, I suppose, but who knew to add that? Madison is an unusually well-mannered foodie. I loved her comment about not refusing a dish (veggie or not) that someone had taken the trouble to prepare for her. This is particularly gracious since the main impression one gets from the hundreds of insanely enticing recipes in this book is that vegetarian is simply the best way to eat. Should you read this Ms Madison, thankyouthankyouthankyou for this book.
Rating: Summary: Amazing Vegetarian Tarts Review: The recipes that I am most drawn to in this book are the amazing tarts and galettes ... I have impressed my friends and relations with the Winter Squash and Roasted Garlic Galette and the Fresh Tomato and Basil tartlets. And the Orange Rhubarb Tart actually stole the show away from my famous Mexican Chocolate Cake at last year's end-of-summer party. My mouth is watering as I watch the rhubarb come up this Spring!
